I aspire to visit as many countries and U.S. states as my age – so far I’ve been to 42 countries and 35 states. Given my role at Air Canada, I feel lucky to be able to have the opportunity to travel the way I do. Travel is a powerful teacher that can help break down barriers, challenge misconceptions and create a greater understanding of the diversity of human experience.
It’s hard to choose! I find myself returning to Palm Springs, Mexico City, Charleston, Tokyo, Sydney and Greece. On my first visit to Greece, it rained incessantly and I promised myself I wouldn’t go back again. However, when it came time for my honeymoon, I decided to give it another chance. I was blown away – the hotels I stayed at, particularly on the islands, were simply incredible. The hospitality, cuisine, pools and breathtaking views are beyond description. NOŪS in Santorini and Domes of Elounda in Crete are among the finest hotels I’ve ever experienced.
A trip to a genuine Cretan olive oil farm is an experience you won’t want to miss. While seeing is believing, tasting is equally essential. I’ve enjoyed numerous olive oils throughout my life, but discovering what to look for – such as the fact that extra-virgin olive oil should have an acidity level below 0.8 per cent – has ensured that I won’t be fooled by low-quality olive oil again.
Food and drink: olive oil, honey and, naturally, Greek wine. I have received a number of evil-eye talismans as gifts during my time in Greece and I have them dotted around my house and office; these blue and white ornaments are iconic in Greece and are believed to ward off negative energy.
It may come as no surprise from me, but on a long-haul trip, investing in a business class or preferred economy seat is worth it – having the extra legroom can make all the difference. I also wear comfortable clothing – I love the look and feel of Duer pants and a Kit and Ace crisp white T-shirt (both Canadian brands!), and I have a quality silk eye mask and Bose noise-cancelling headphones. I also always set my watch to the local time wherever I am flying to as soon as I board. This allows me to try to adapt my sleep patterns as soon as we take off.
We are so lucky to be alive at this time in history. To be able to wake up in Sydney and have dinner in Singapore is profound. Life is short and the flights are ready for takeoff. —As told to Antonia Whyatt
